Hearts of Palm Dip

(Serves 8 to 10)
Everyone always asks what is in this dip. The hearts of palm blend together so beautifully with the other ingredients, no one can identify the individual ingredients. Though, everyone agrees, this dip’s a winner!
- 1 can (14 ounce) hearts of palm
- 3 tablespoons chopped green onion
- 3/4 cup freshly grated Parmesan cheese
- 2/3 cup mayonnaise
- 1/4 cup sour cream
- 2 tablespoons chopped pimento
- 1/8 teaspoon cayenne pepper
Preheat oven to 350 degrees.
Drain hearts of palm and chop. Mix with remaining ingredients. Spread mixture in a small, shallow baking dish. Bake 20 minutes or until hot and bubbly. Serve with crackers or toasted French bread.
Make ahead: Dip can be assembled but not baked earlier in the day, covered, and kept in the refrigerator. Bring to room temparature before baking.
