When it comes to breakfast, most of us want something quick and easy to prepare, but tasty and healthy, too. Made with simple ingredients you can find in any grocery store, these burritos are infused with the unique and flavorful taste of New Mexican green chiles. These burritos are sure to become a family favorite!

History Behind These Breakfast Burritos

Back in the ‘80s and early ‘90s there was a fabulous restaurant in Denver called The Mocha Café. I loved going there for breakfast or brunch, and my favorite dish was their Green Chile Burrito. Fluffy scrambled eggs with sausage rolled in a tortilla, topped with enchilada sauce and grated cheese. Yum! Since I’d been craving it for years, one morning I decided to create my own, healthy version of this delectable egg dish, using turkey sausage and egg whites. Green Chile Breakfast Burritos come together in minutes, so no need to wait for the weekend to indulge!

Green Chile Breakfast Burrito Ingredients

There are 7 main ingredients in these quick and easy burritos, plus an optional one for garnish (details including quantities are in the recipe card below):

  • Cooked turkey breakfast sausage links
  • Green onions
  • Egg whites
  • Green chile enchilada sauce
  • Lime juice
  • Large flour tortillas, regular or whole wheat
  • Cheddar-Jack cheese
  • Sour cream or la crema, for garnish (optional)

Sausage Breakfast Burrito Substitutions and Variations

There are many, many ways you can vary the ingredients in these burritos – to fit what you have on hand, and/or your family’s likes and dislikes.

Here’s a few substitution ideas:

  • Breakfast turkey sausage links – use turkey patties, cooked pork sausage links or bacon bits
  • Green onions – use chopped yellow onion, red onion, or shallots
  • Egg whites – use whole eggs or a mixture of eggs + whites
  • Green chile enchilada sauce – substitute prepared red enchilada sauce
  • Lime juice – use lemon juice
  • Cheddar-Jack cheese – use just Cheddar cheese

And, a some possible additions (to the filling):

  • Black beans
  • Chopped red onion
  • Chopped bell pepper
  • Chopped jalapeño pepper
  • More green chiles

How to Make Green Chile Breakfast Burritos

Here’s an overview of how to put these burritos together (details in the recipe card below):

  1. Slice and brown sausage.
    Cut sausage links in half, then slice. Spray a a non-stick skillet with nonstick cooking spray and place over medium heat. Add sliced sausage and cook until beginning to brown.
  2. Add onions.
    Add green onions to the sausage. Cook until onions begin to soften and sausage is fully browned.
  3. Add egg whites.
    Add egg whites and cook, stirring occasionally, until fully cooked.
  4. Warm enchilada sauce.
    While the eggs are cooking, place enchilada sauce in a small saucepan and bring to a low simmer, stirring occasionally.
  5. Warm tortillas.
    Microwave tortillas for 10 to 15 seconds, just until warm.
  6. Wrap burritos; top with sauce and cheese.
    Divide egg mixture evenly between tortillas and roll up (see detail below). Place each burrito, seam side down, on a dinner plate. Top with generous amount of enchilada sauce; sprinkle with grated cheese and freshly ground pepper. Garnish with sour cream or la crema (optional) and chopped green onion. Serve immediately.

How to Wrap a Burrito

It’s actually easy to wrap a burrito! Here’s a step-by-step guide:

  1. Lay out 1 tortilla.
    Place one tortilla on a clean work surface.
  2. Add filling.
    Place in a log shape, around 1 1/2 inches from bottom and sides of tortilla.
  3. Fold – bottom, then sides.
    Fold bottom portion of tortilla up over filling to cover, then fold in sides.
  4. Roll.
    Roll up tightly. End with the top edge of the tortilla on the bottom of the burrito; flip over if needed. Place on plate.
  5. Repeat.
    Repeat with remaining tortillas and filling.

How to Serve Green Chile Breakfast Burritos

I like to serve these burritos on individual dinner plates, with fresh fruit, usually berries, on the side. For a group of 4 to 6 people, place burritos in a row on a serving platter, and top with sauce, cheese and chopped green onion. Pass sour cream on the side. Serve fresh fruit in a bowl alongside.

If making ahead or if you have leftovers, cool, place in an airtight container and refrigerate. They will last for up to 3 days.

  • 3 cooked turkey breakfast sausage links
  • 3 to 4 green onions (depending on size), chopped (white, light and some of the dark green portion)
  • 3/4 cup egg whites (from 6 to 8 large eggs)
  • 1 cup green chile enchilada sauce (canned, jarred or homemade)
  • Juice from 1/2 lime
  • 2 (8 or 9 inch) flour tortillas, white or whole wheat
  • 1/2 cup grated Cheddar-Jack cheese
  • Sour cream or la crema, for garnish (optional)

Instructions

  1. Slice the sausage in half lengthwise, then slice into 1/4-inch slices. 
  2. Spray a nonstick skillet with cooking spray and heat over medium heat. Add sliced sausage and cook, stirring occasionally, until beginning to brown, around 4 minutes.
  3. Set aside 1 tablespoon of chopped green onions (for garnish); add remainder to the sausage. Cook, stirring occasionally, until onions begin to soften and sausage is fully browned, another 4 to 5 minutes..
  4. Add egg whites and cook, stirring occasionally, until fully cooked.
  5. While the eggs are cooking, place the enchilada sauce in a small saucepan. Stir in lime juice and bring to a low boil, stirring occasionally.
