There’s nothing like a fresh ear of corn during the summer. It’s the perfect complement to any BBQ, and everyone loves it, even kids! My go-to preparations for fresh corn are boiling, grilling or sautéing. However, I have never been able to serve fresh corn to a crowd. Even my largest stock pot will hold a max of 8 ears. I recently learned a fabulous, foolproof way to prepare a dozen – or more! – ears of corn for a crowd. My new friend Jane Metzger introduced me to the method “cooler corn”. All you do is:

  1. Put shucked ears of corn in a cooler.
  2. Add enough boiling water to cover the corn.
  3. Close the lid and leave it for at least 30 minutes, up to 2 hours.

Presto! Perfectly cooked ears of corn for your party!
