One of my favorite foods in summer is fresh corn. Here in Colorado, we have wonderful corn from the town of Olathe — sweet, juicy and tender. Over the years, I’ve accumulated or created numerous recipes that pay homage to this delicious food. Here are the best of the best, all of which have been prepared numerous times, not only me but also family and friends – all of whom agree they are easy, reliable, and full of fresh, sweet corn flavor!
Corn and Prosciutto Salad
For this quick and easy side dish, cut corn off the cob and sauté it with onion and prosciutto (or bacon), then top it off with chopped fresh chives. So simple and fresh — and so scrumptious! Tip on removing corn kernels from the cob included!
Grilled Corn Salad Recipe with Zucchini and Tomato
Grilled Corn, Zucchini and Tomato Salad is a quick and easy, fresh side dish that’s perfect for summer! Grilling the corn and the zucchini brings out their natural sweetness and adds a bit of smoky flavor.
Mexican Black Bean, Tomato and Corn Salsa
Mexican Black Bean, Tomato and Corn Salsa is a wonderfully fresh and scrumptious mix of fresh flavors that can be served as a dip or in one-bite servings.
Corn and Chicken Chowder
Warm, creamy, thick and chunky, Corn and Chicken Chowder is the ultimate comfort food. My healthier version of this classic dish is still full of flavor, but has less calories, fat – and Weight Watchers’ points. Plus, it’s super easy to prepare with pantry ingredients.
Southern Corn Pudding
Moist, fluffy and soufflé-like, Southern Corn Pudding is perfection in every bite. Easy to prepare, too, with fresh, available ingredients – no canned corn or boxed cornbread mix. Plus, our Corn Pudding recipe dates back generations, so it’s definitely tried and true!
Fresh corn for a crowd
There’s nothing like a fresh ear of corn during the summer. It’s the perfect complement to any BBQ, and everyone loves it, even kids! My go-to preparations for fresh corn are boiling, grilling or sautéing. However, I have never been able to serve fresh corn to a crowd – until I found this solution!
