Zesty Pimiento Cheese Spread

(Serves 6 to 8 )
Mom loved pimiento cheese and frequently made it, often just for family to enjoy. She never measured the ingredients – just mixed them to taste. This is my version of what she used to whip up. I added the cayenne pepper to give it a bit of a kick.
- 1 cup grated yellow sharp cheddar cheese
- 1 cup grated white sharp cheddar cheese (mom liked Cracker Barrel brand)
- 6 tablespoons mayonnaise
- 1 small jar (2 ounce) chopped pimientos
- cayenne pepper
Place all ingredients in a medium mixing bowl and mash together with a dinner fork until well mixed. Season to taste with salt and pepper.
Make ahead: the cheese can be made up to 3 days before serving, covered, and stored in the refrigerator.
